Wow - that bark with mint and berries looks divine. I don't like white chocolate, but it seems like it would work just fine with milk or dark. Thanks! Yum.
Last Christmas I made peppermint bark as a present for the dry cleaner, the neighbours, and about ten colleagues. It was so easy and cheap--I was thrilled with the results and my colleagues were also impressed. The recipes above look tasty and I'm planning more edible gifts this year.
I've been making a chocolate bark loaded with salty pretzels and broken pieces of heath bar. It takes about 10 minutes to make (in the microwave!), and it's the hit of every party I bring it to.
That Rachael Ray recipe is a lot like Paula Deen's Pine Bark-- an insanely easy recipe involving Saltines, butter, and chocolate. And it's also simple to modify-- for example, adding chopped nuts on top, or using a darker chocolate (she calls for milk chocolate and I prefer dark.)
