Zach and Clay's Braised Lamb with Celery
We adapted this recipe for our braise: Braised Lamb with Celery. It includes instructions for making a chicken stock, but we happened to already have some homemade chicken stock in our freezer. In place of a lamb shoulder, we substituted half a leg of lamb, bone-in, for a more flavorful braise. The entire process, start to finish, took four hours, and the result was delicious.
As you'll see in the photo, we served the lamb and braised vegetables on a bed of couscous, with some steamed broccolini on the side.
