What are some recipes that use blue cheese, but also mellow out the flavor a bit? I recently received a cheese-of-the-month club gift and the blue cheese in the first month's shipment ended up going to waste. My boyfriend and I want to like blue cheese (I swear!) but the taste is just too intense.
We just received another chunk this month, and I don't want it to have the same fate as the first. Any suggestions?

Editor: Lizzie, this blue cheese salad dressing recipe mellows out the flavor of the cheese with buttermilk, sour cream and mayo, so it might be a good place to start. (You could even use less cheese and add some herbs, to make it more like a blue cheese ranch dressing.)
