Lindsay of the lovely food blog Love & Olive Oil and I have something in common: We like boozy cakes. We also like layer cakes with a serious footprint; if I'm going to eat cake, I want cake — preferably stacked up four layers high. This chocolate cake packs a lot in — red wine, blackberries, buttercream — and it's tall, so it fits the bill admirably.
Also, hey! It's February, and you know what that means? We can start giving you all those Valentine's Day recipes we bookmark — we may have a little bit of a chocolate overload coming your way these next two weeks. Hey, it only comes once a year, and when it rolls around you should make it count.
I personally think this cake is just about the sexiest baked good I've seen lately, so there you go: It's the opening salvo of Valentine's Day 2012.

That looks amazing! I can't wait to try making a cake with red wine in it!
The only thing I am not keen on is the frosting of butter and powdered sugar. I like real buttercream frostings -- French ideally, but barring that, Italian or Swiss. They are less sweet, and I think they would marry better with the cake...
A few months ago, I came across a great cheat -- Marshmallow Fluff! Seriously, it makes the best Italian buttercream cheat!

that's an incredible-looking cake and would be perfect for Valentine's Day. Every time I see a recipe for a multi-layer cake I get so jealous. I only have one round cake pan, and I don't have room for more!

Jane: Honestly the cake looks kind of silly with such huge layers. Traditionally you would take your 2 inch cake round and slice it up into three layers, not bake an entire pan worth of cake for each layer! So you can make multilayered cakes too! If you want it to be taller than 3 inches, use your pan twice! ;)
