I love lentils (and coincidentally, my last name means "lentil" in Lebanese!)
French lentils are my favorite. I like to use them in savory pies - usually with roasted mushrooms. I think the flavors are so perfect together.

Nice! Just when I've decided to ditch rice altogether (I've been eating only brown rice for the last three years or so, but I'm tired of it) and am now looking for what to do with lentils besides eating them spiced over rice with a healthy dollop of plain yogurt on top.
Also, I always make extra to puree them, refry them in olive oil and stuff whole-wheat tortillas with them, but I've grown tired of that, too.
That first recipe, the pockets, oh my! Sounds lovely. But working with dough scares me, and I don't own a mixer. :( Is there any way the dough could be worked by hand?

Have to agree with the comment above about French Lentils being the best. Runner up is red lentils in a daal. We love these lentil fennel wraps at our place as a quick lunch or supper.
