Those muffins look like a recipe I found in Martha Stewart's Every Day food--and they are GREAT.
I love sprinkling a little cinnamon in my coffee before brewing. I've been meaning to try pumpkin pie spice, but I'm a little afraid. Ginger in coffee? Anybody done it?
I've started putting a little in my oatmeal in the morning as well. It goes great with steel cut oats.
We never have to dust off our bottle - the boyfriend eats it liberally sprinkled on vanilla bean ice cream and/or apple sauce. In fact, I'm low on pumpkin pie/apple pie spice!

While they don't necessarily call for pumpkin pie spice, you can certainly omit the list of spices and use it instead (I do now, actually). Enjoy them!
When I was a kid I would use it in place of cinnamon on toast and have pumpkin pie spice and sugar toast. It was yummy.
