This is my Mother's sweet potato pie recipe that she developed and refined 50 years ago. I have to admit that I am spoiled. My Mother tried to make at least 1 pie and 1 cake every Sunday while I was growing up and living at home. Most often the pie would be a sweet potato pie. When she was in her sixties she gave up making her own crusts, but when she was into her late eighties she would make a sweet potato pies for Thanksgiving and Christmas. She is 93 now, and we make the pies for Thanksgiving. She tells us that our pies taste better than hers, but we know that's not true. We follow this recipe that she wrote out by hand many years ago, but ours just don't taste the same as the pies she made for us for over 40 years.
Edith's Sweet Potato Pie INGREDIENTS: 1 medium sweet potato 1 cup sugar 1/3 cup canned milk 3 eggs 1/2 teaspoon vanilla Nutmeg Cinnamon Pumpkin pie spice 1 pie crust METHOD: Boil potatoe until tender. Peel and mash. Beat eggs with canned milk. Add to potatoe along with spices. Pour into prepared pie crust. Bake 45 minutes at 350 degrees. SERVINGS: 8 SOURCE: Edith Haile
