What inspired this recipe? As someone who lives in the home of cheesecake and grew up less than a mile from the world's best cheesecake (at Junior's restaurant in Brooklyn, NY) I've always been disappointed by cheesecake ice cream. I decided to create an ice cream that would satisfy my desire for rich, tangy and creamy cheesecake ice cream.

Cherry Cheesecake Ice Cream
1 8oz package cream cheese
1 8oz package sour cream
1 cup sugar
1 cup half and half
juice of 1/2 lemon (or 3/4 lemon if you like your cheesecake tangy)
1/4 teaspoon vanilla extract
1/4 teaspoon almond extract
1/4 to 1/2 cup pitted, halved cherries
1 teaspoon vodka (optional, to prevent excess crystallization in the freezer)
Beat cream cheese in a bowl until fluffy and smooth. Add sugar and beat to combine. Scrape the bowl, then add the sour cream and half and half. Add lemon juice, vanilla and almond extracts, then taste the mix to judge flavorings. If you prefer a tangy cheesecake flavor, add more lemon juice. Stir in the vodka, then cover and chill for 30 minutes.
Start your ice cream maker and add mix. It takes about half an hour to freeze, add the cherries during the last few minutes of mixing. The ice cream will be pretty loose after half an hour, so place in a container in the freezer overnight to firm up.
