Straight up macaroni and cheese is seriously good all on its own, no matter how you make it. But this is also one of those magical dishes that only seems to get better as you start adding things in. Here are six of our favorite mix-ins. What are yours?
1. Bacon - Yes, everything really is better with bacon.
2. Roasted Butternut Squash - This works well with a sharp cheese to contrast the sweetness of the squash.
3. Ham and Peas - A childhood classic. We'll still eat it any day of the week.
4. BBQ Pulled Pork - We already love our BBQ with a side of mac n’ cheese. Combining them deliberately is a match made in heaven.
5. Black Beans, Sweet Corn, and Salsa - This spicy southwestern version is especially good made with smoked cheddar.
6. Caramelized Onions, Mushrooms, and Fresh Herbs - Fancy! We sauté the mushrooms until they’re completely golden for extra-savory flavor.

broccoli!
Sometimes I'll add leftover sloyy joes into the mac & cheese.
Oh, and spinach. I add that to darn near everything.
And bacon.
Canned tomatoes and lots of pepper. It's addictive.
grilled chicken and mushrooms sauteed with balsamic vinegar. so delicious.
Salsa. Spicy not fruity.
My family traditionally add but two things to our macaroni cheese - the aforementioned bacon, and slices of hard boiled eggs.
My wife, when I first told her of this was sceptical at first, but has become a complete convert after trying it!
I sometimes add ground beef or ranch style beans, esp. if the mac & cheese is the main course on lazy nights.
Prosciutto and peas. Can't beat that combo.

Salsa. My mom sometimes mixed in sour cream.
steamed/sauteed broccolli, red peppers, and carrots.
with garlic-cilantro breadcrumbs on the top.
Roasted diced chicken and broccoli! Great way to bulk it up to a quick meal, and use up leftovers in the process. Husband likes to add the ends of bags of frozen veggies and, yes, cut-up hot dogs. ;-)
Green onions and fresh cracked black pepper. Sometimes with turkey bacon. Yum!
The salsa and black beans sounds right down my alley. I will have to try that sometime.
Broccoli and corn and garlic salt. Sometimes I add israeli feta into the cheese sauce, too.
Morning start meat crumbles cooked with taco spice - yummy
Before I went back to being a vegetarian, it was tuna and peas I would add. Now I like to do mushrooms and peas.

lots of pepper, i agree.
my partner is allergic to seafood, so when i make it without her (which is rare) i always always put lump crab meat in. (YUM!)
otherwise, just lots of pepper and sometimes some peas.
My top M&C condiments, but not at the same time!
* Tomato Chutney, a family recipe - sweet and spicy-hot with cayenne pepper and a hint of cinnamon
* fresh tomatoes and sweet union, include while still hot
* Curry powder
* Worcestershire sauce
Of course, plain M&C is fine with me, as long as the macaroni noodles are good quality (not just wet noodles), and the cheese is extra sharp cheddar - yum!
Ultimate guilty pleasure for me is mac and cheese with chicken and sriracha. I love that spiciness!
Sometimes I mix in pureed roasted red pepper, which gives it a nice sweetness.
All time favorite toppings though: bread crumbs and sliced green olives added before baking. So good!
I have never in my entire life (granted, I'm only 25) mixed anything into my mac & cheese. Whenever I crave it, I always crave my mom's classic recipe, but now I want to try doing this too!
For baked mac and cheese, I like to put sliced roma tomatoes, plus a little olive oil and S&P, on top just before it goes into the oven.
Sun dried mother effing tomatoes. It's my favorite way to class up Kraft macaroni and cheese, which is a guilty pleasure I've had since the fourth grade.
Cut up hot dog! It was seriously one of our favourite meals growing up and whenever I'm in need of comfort food I boil up a dog, slice it into little rounds and mix it in with my mac & cheese. So trailer trash but oh so wonderful.
I love mixing in tuna. It's the cheap college version of tuna noodle casserole.
A few splashes of buffalo sauce give it a nice little burst of flavor.

Chopped Italian plum tomatoes (a special variety they sell in glass jars here), sometimes sautéed with finely chopped onion, and some added tomato paste.
Sometimes I sauté fresh chopped tomato with onion instead.
I find that tomato cuts nicely through the heavy cheesiness, and makes it a bit brighter.
Sauteed onions, garlic, ham and pickled jalapenos -- mac and cheese with a kick.
This past summer I got hooked on fresh garden tomato and diced avocado in my mac & cheese. Regardless of what I put in it, it's always topped with herb toasted panko crumbs. Mac & cheese is woefully sad without it.
ham from the deli, diced tomatoes, herbs (usually sweet basil), and ever since the time I inadvertently used vanilla soy milk, a splash of vanilla - it's sounds weird and terrible, but now I use it almost every time!
Roasted cauliflower really works well with/in most mac and cheese recipes and adds bulk without tons of calories.
i'm with joe on the buffalo sauce. buffalo chicken in mac & cheese with bleu cheese and diced tomato, breadcrumbs, scallions.... and when i really want to indulge...crumbled bacon.
I also add roasted butternut squash to make it healthier...and it's pretty tasty too
