The lightly-sweet flavor and airy texture of coconut macaroons already sounds like an ideal treat on a hot day. Imagine adding a scoop of fresh fruit preserves or a dollop of lemon curd. And just the thought of chocolate pudding has me reaching for my whisks.
These little two-bite tarts would make a great finish to a backyard dinner party, and they could certainly hold their own at a potluck dessert table. I'm also curious to try making a full-sized pie at some point. What a show-stopper that would be!
