We have a well-documented love of avocado toast, and we thought it was worth revisiting. Yes, it's a bit of a stretch to call it the best breakfast ever (cinnamon Dutch babies? breakfast burritos?), but it's got to rank right up there. Also? It's vegan.
Avocado toast is of course the simplest thing to make: Slice and toast a thick, good-quality piece of bread, drizzle it with a bit of olive oil, and smash half an avocado on top. Sprinkle with salt and pepper. Devour.
This is one of my favorite breakfasts right now — it's quick, easy, and cool. All it needs is a quick pop in the toaster. But it's also quite filling and satisfying! Not to mention creamy and crunchy. How do you top avocado and olive oil, together?

Haha I eat this as a small dinner/large snack, never for breakfast! Though maybe I should start!
Add a few ingredients and you have a winner.
Here is one of my favorite recipes:
1 slice toast
1/4 avocado
1 pinch of salt
1 strip of bacon, fried and cut in half
1 poached egg
Place the bacon on the toast. Cut the avocado into small cubes and spread it over the bacon and toast. Sprinkle with salt. Place a poached egg on top.

It definitely doesn't suck, and mashed avocado beats butter by about a mile. Add a squeeze of lime. Or a poached egg. My favorite addition here, though, would be a sprinkling of Aleppo pepper. Oh my.
oh yes. I'd eat this (I HAVE eaten this) for breakfast, or any time of the day. I would happily eat an avocado every day. And thin, delicate banana peppers make a nice counter-point to the avocado, too. Delicious!

I love avocado toast!!! A restaurant in Nolita has avocado toast with lime juice + red pepper flakes. AMAZING.
No no no.. you can't have the best breakfast without honey. So you make this avocado toast (without salt & pepper) & drizzle honey on top. You won't stop licking you fingers. It's delicious & healthy.
I have no idea why I've never had this for breakfast. I love avocados and put them in my sandwiches and salads all the time.

BOOOOOOOOOOO avocados here (in NC) are like $1.69/ea and not at all ripe. I would eat them for breakfast, lunch, and dinner if they wern't worth their weight in gold...
This is a frequent breakfast for me, too! For a special twist, try using (a good quality) truffle salt. Sublime!
Oh you have GOT to try topping it with chopped pistachios and a final drizzle of olive oil. Simple and amazing.
This is one of my favorite things ever, and I eat it ALL the time--but only for lunch or afternoon snack, never breakfast. (I generally prefer something sweet at breakfast.) I never put olive oil, but always a good squeeze or lemon. Sometimes I add thinly sliced cucumber and/or hard-boiled egg.
I thought I was the only one who ate this for breakfast!!! It is by far the best breakfast or snack EVER! It is almost like eating scrambled eggs on toast... but way better, I add a splash of lime juice as well but it does not get much better!
i have been having this almost everyday for about 2 months! i'm a fan of pairing the avocado with a light english muffin. mmm.

Had this for breakfast today, but I skip the olive oil and just top it with sea salt. This is my no-time-for-breakfast breakfast, so I don't get fancy.
I love avocado toast. If I am in the mood for some comfort food and something a bit more substantial I go for whole grain toast, avocado, tomato, and fried tofu steak topped with salt and pepper - yummy vegan goodness.
Mash it up with some mayo, then sprinkle with Kosher salt, fresh pepper and a squirt of lime. Top with toasted sunflower seeds.

I LOVE this, and eat it almost every day for breakfast. I like to have mine on a 100 calorie, high fiber toasted English muffin topped with a slice or two of a juicy heirloom tomato. SO GOOD! The fiber in the muffin and avocado mixed with the healthy fats keep me satisfied for hours. Great start to the day!
Mix 1/2 and avocado with a tablespoon of goat cheese, spread on toast. Top with tomato slices, coarse sea salt, fresh cracked pepper, tiny drizzle of olive oil!
I get 4 packs of avos at Trader Joe's and put them on everything, and avo toast is one of my favorite breakfasts! I use mayo instead of olive oil though.
i make mine by rubbing a fresh garlic clove on the toast then mushing fresh tomato innards on top, like spanish/-style pan con tomate. smooshed avocado on top, sprinkled with salt, drizzled with olive oil.

Oh man! My boyfriend introduced me to this concept last spring, and I've been addicted ever since. I like to use Ezekiel 7 sprouted grains english muffins toasted with olive oil in the toaster oven, then I add the avocado, salt, pepper, and sun-dried tomatoes. Sometimes, I add a little mozzarella or manchego if I'm feeling like a heavier version. Yum!

This is one of my favorite breakfasts, and it totally repulses my boyfriend since he's an avocado-hater! I love it with olive oil, Maldon sea salt, sometimes a bit of smoked paprika, za'atar, and/or minced garlic.
How did I grow up eating avocados and not know about this. Must acquire ripe avodaco immediately! Perfect use for my homemade wood-fired-oven sourdough.

I love avocado sandwiches, but they seem so lunchy to me. When I was a kid we did have avocados for breakfast, but they were invariably sweet. Mashed with cereal, milk and sugar or else drizzled with ribbons of condensed milk. Now that's breakfast!
Never tried this for breakfast, but I will; however, I would "enhance" the toast with a quick scouring of garlic. Just rub a whole peeled clove over the surface, and the rough texture takes off just enough for a hint of garlic flavor. Maybe that's best saved for supper, though, since you wouldn't want to head out to work with garlic on your breath.
I love it simple. Fresh, ripe California avocado on a toasted pita with kosher salt. The slight crunch of the thin, toasted bread is amazing against the soft perfection of the avocado.
I eat mine on rice cakes. All my friends hate rice cakes, but I think they are tasty like this.
You know what is GREAT on avocado? Tobaco's chipolte sauce. It's not like regular Tobasco. It is rich, thick and smoky. Yummmmm!

My lunch, almost every day. It never gets old. But its essential to have the right bread. My favorite is Acme walnut bread, toasted dark. Yum.

I'm a big fan of this as well, and like ethicalcannibal, I also love avocado on rice cakes. And yes, the occasional splash of Tabasco never hurts!

I have enjoyed avocado toast since my hippie days in Albuquerque. We would toast whole wheat bread and top with mashed avocado, cayenne pepper, nutritional yeast (that's the hippie part, but it pairs really well with avocado) tomato and salt and pepper. It was breakfast, lunch and dinner some days, and still is.
Smear cream cheese on the toast, smush an avocado on top, and add a tomato slice and shredded basil leaves as a topper. Doesn't get better than that.
Now I'm excited to try it with honey though!

where I came from, we're used to avocado eaten sweet.
We drizzle with chocolate syrup and/or sweetened condensed milk.
Unfortunately, am not too big on avocado growing up. But since my son is into avocado big time, I may have to start eating it again, it's healthy :)

i do mine with soy sauce, slice avocado and dip in a lil bit of those japanese soy sauce and lay it on toasted thick whole meal bread.

This sounded awful to me when a friend recommended it, but it was actually pretty good: avocado on toast with hummus. Sounds gross, but it's actually pretty great and adds a bit more protein for those of us with blood sugar issues.

Before you mush the avocado on the toast, spread the toast with a thin layer of wasabi. Gives it a little kick and a lot of flavour. Love it with freshly ground pepper on the top too.

I finally decided to try this out for my breakfasts this week. I love it! Really fast and even if the avocado has turned a little brown from being exposed to the air (I only use half an avocado a day), it still tastes great!
I do honey on my avocado toast. I didn't think avocado and honey would every work but I once tried out (at martha stewart's suggestion, of course) avocado, honey and plain greek yogurt and its amazing!
I've loved avocado on toast since I tried the Cafe Gitane version, and now I realize I'm late to the bandwagon. I just had it for lunch with fried eggs over easy and it was the easiest and yummiest lunch ever. Must make up for lost time.
