I first had fiddlehead ferns at L'Express in Montreal -- "tetes de violins" -- delicieuse!
I was planning on making an asparagus and lemon risotto this week, but not I'm going to hold off a bit. I hope to see fiddleheads at the farmer's market this weekend (I live in Maine, but I'm too afraid to pick them myself), and THEN I'll make the risotto! Yum!
I recently made the Shaved Asparagus Pizza from Smitten Kitchen. Super delicious! (though I did sub my own pizza dough recipe the second time...liked it better than the recipe given)
oh my, I read that last dish as "abortion" pasta with asparagus, pancetta and lemon zest.....ummm, didn't sound very appetizing
I made the Smitten Kitchen pizza also-once last week and again last night. Last night, along with the shaved asparagus, I tossed in shaved green garlic + red pepper flakes. Then, when it came out of the oven I drizzled w/truffle oil + meyer lemon juice. So good!
I love the asparagus and egg combo, especially in omelette form!

I just bought a bunch of asparagus yesterday to add into my version of risotto. Those asparagus wrapped in prosciutto and phyllo is a great idea!
Love asparagus in a risotto with snow peas! Or my obsession of the moment - roasting them with a little salt, pepper and olive oil. It tastes like fries but better! And works especially well on those thick stemmed ones.

Another idea: Make socca (chickpea flour pancakes), laying spears of blanched asparagus in a pinwheel atop the unbaked batter. Bake as usual

After some practice it now takes me 10 minutes from fridge to table which is great for those nights when I just have no energy, but want something healthy!
I also like just broiling asparagus after coating in olive oil, sea salt and pepper - they can get a bit like french fries but ten times better.
