Lard's popularity is on the on the rise, thanks in no small part to meat CSAs! It definitely makes sense — the meat from these pasture-raised animals is delicious, so why not the lard? Modern Farmer reports that farmers were just throwing their lard away (gasp!) before finally being convinced to try it in the market.
