Q: What gluten-free flour or mixture of flours can be substituted for rye flour?
I found this wonderful recipe for a Dutch spice bread but its main flour is rye flour, and having celiac makes rye flour off limits.

...there is nothing like rye. But teff has a similar slightly sour taste.
Sigh.
Its hard to be new to celiac, isn't it?
i was diagnosed 6 months ago, and some things just cant be duplicated.
Just as vegan 'cheese' isn't like dairy cheese, G/F baking can't directly copy many grains.
so, sometimes that means leaving some recipes behind.
There are many really, really awesome recipes out there though!

Teff is probably your best bet for a straight substitution. That said it's hard to substitute just one flour for another in GF bakery. :S
I've made some faux-rye using a basic GF mix and adding a little bit of cocoa for colour, and grated orange peel, dill, and caraway for the rye taste. Sounds weird but dammit, it works. NOM NOM.
Welcome to the wonderful world of gf baking! I tried a gf faux rye bread once. It came out of the oven smelling like cow poo! I almost hurled on the spot.
It would really depend on what the recipe called for in terms of spices etc. I make a mean gf whole grain bread that you could add molasses to and it would look like rye. Most breads made with teff could have added molasses and cocoa to make a mock rye.
You could also use a standard GF bread flour mix with add a GF rye flavoring powder (available online and in some stores) and a bit of molasses for color.
