Q: I am starting to experiment with different types of flours for baking. I purchased some soy flour and I am not quite sure what to do with it. I haven't found any interesting recipes and was wondering how to incorporate it into a recipe or substitute it for regular or whole wheat flour. Any suggestions?
It is 35% protein so I thought it would be a great addition to whole grain muffins for morning breakfast.

I use soy flour in place of most flours when cooking and it doesn't seem to be an issue. There is definitely a more distinct taste with it, so I do notice that but it doesn't bother me. I don't really use flour all that often, so the most recent things I can remember using the soy flour for were breading and pan frying trout (really good) and using it to make a roux.

the back of the packing of my soy flour says that you can sub 20% for normal flour without having problems(:
