An Ingenious Way to Make Scalloped Potatoes

I am proud to report that the Hasselback trend is still alive and kicking. From apples to tater tots to sweet potatoes, we're no strangers to it here at The Kitchn. This recipe for scalloped potatoes is the latest iteration of the Hasselback craze — and it looks utterly delicious.

These potatoes aren't truly Hasselback potatoes, as you slice them all the way through, but they play off the signature accordion-like appearance of the beloved Hasselback.

By stacking thin slices of potato in the dish, you create plenty of crevices for the good stuff — a mixture of cheese, cubed pancetta, heavy cream, garlic, and fresh thyme — to sink into and permeate.
