This weekend you might find yourself inundated with hard boiled eggs. Of course there are lots of different recipes you could incorporate them into but we're rooting for the humble egg salad sandwich. It's hearty, satisfying and surprisingly versatile in these eight recipes we're jonesing to try out.
First off, here's a tip for perfect hard boiled eggs (and keep in mind that older eggs peel more easily!). And if you really want to try something exciting, consider making your own mayo.
• Classic Egg Salad. Make a simple recipe with egg, mayo, a bit of mustard, some salt and pepper, a sprinkling of parsley and our go to extra ingredient: a squirt of sriracha.
• Tarragon Shallot Egg Salad Sandwiches. Grab some herbs and chop up some shallots for a simple, French take on the egg salad sandwich from Gourmet (pictured above).
• Spicy Egg Salad Sandwiches. We love a little kick and this recipe calls for horseradish and bacon, a combo we cannot ignore. From Buttermilk Press.
• Egg White Salad. A slightly lighter fare, the egg white salad from Real Simple combines egg whites with tomatoes, parsley and pepper to make a nice topping for crackers or an open face sandwich that won't weigh you down.
• Curried Egg Salad. This recipe comes courtesy of Martha's daughter Alexis and uses the crunch of celery with a little kick of curry to spice up ordinary egg salad. From Martha Stewart.
• Crisp Pancetta and Egg Salad Sandwich Recipe. A little bit of pancetta, some brioche bread and a solid recipe for egg salad. We're sold. Find the recipe on Chow.
• Danish Egg Salad with Smoked Salmon & Dill. This recipe strikes us as a great brunch food and also a nice recipe for spring since it uses dill. We also never complain when a recipe calls for sour cream (use creme fraiche if you've got it!). From Loulies.
• Egg Salad Breakfast Burrito. Try Emma's idea and incorporate those hard boiled eggs into a breakfast burrito complete with salsa and chiles to give the traditional take a kick in the pants.

Classic is where it's at! I love egg salad.
Mmm. Classic egg salad for me. I love mine as an open faced sandwich. Toast an english muffin. Add a slice of tomato to each half. Pile on the egg salad. Top with a bit of greens. Enjoy. (Preferably with a mimosa. Because, hey, it's spring!)

The runny [soft-boiled?] eggs are creamy and go perfectly with the sun-dried tomato pesto. I get that on a toasted ciabatta and it's soooo good!

One of my favorites is to add chopped green olives to classic egg salad. Sounds weird but so good!
I found myself without mayo & made egg salad just using olive oil & dijon mustard, S&P. Yum! I love it with watercress or arugula on toasted bread. Great in the summer with fresh tomatoes, too. Avocado also pairs well.
I like to mix up egg salad and pimiento cheese--just add pimientos or roasted red peppers and either a slice of or grated cheese. Olives are a good addition too.
One of the few cravings I had when I was pregnant was an egg salad sandwich. Yum! Mayo, mustard, relish, a dash of salt and pepper on toasted bread.
I found a good recipe on epicurious once in which you sub some of the mayo with sour cream. Delicious! Much lighter and fluffier (I hate over-mayoed egg and tuna salads). I usually do that, and then add a whole bunch of fresh chives. Another good option is adding capers.
liso - i've added a few chopped capers into my egg salad before and it's yummy, i would think green olives would be good too.

We just used our post-easter egg surplus to make a batch of egg salad inspired by (but quite adapted) the spicy bacon version above. reduced the mayo and added chives and mustard!

I made the curried egg salad, and the salmon one but without the salmon. YUM! I am going to work egg salad into my weekly rotation for work.
Oh, my gosh. There is a food truck in the Bay Area that sells the most amazing Cuban egg salad sandwich. The salad is simple with chop green onion, served on french bread with arugula and the best part.... jalapeno potato chips inside the sandwich. It might be the best I have ever had.

What is it with Californians putting mustard in egg salad? I grew up putting miracle whip, apple cider vinegar, and pepper in it. That's all, and it's nice and tangy.
Boiled eggs: Another option for using boiled eggs is to make Goldenrod Toast - a great comfort food (my husband makes this - it's from his childhood).
Put aside one (or more) of the egg yolks and chop everything else. Make a good white sauce, mix in the chopped egg. Serve over toast - with a bit of grated yolk on top. Now you have Goldenrod Toast. :-)
