Amp Up Your Pesto with Olives and Sun-Dried Tomatoes

A simple bowl of spaghetti dressed in pesto is one of my favorite weeknight dinners. But just because it's simple doesn't mean it's boring — this pesto recipe, for example, features olives and sun-dried tomatoes.

This twist on pesto is far from the classic: You swap pine nuts for almonds, and add parsley to the requisite basil. The sun-dried tomatoes and olives add a unique texture, reminiscent of a tapenade.

Once you've cooked your pasta, toss it with the pesto and top with toasted breadcrumbs. This recipe doesn't call for any cheese, but a sprinkle of fresh Parmesan would definitely work here.
