Man, I love a good vinaigrette. The best ones elevate a simple pile of greens into a salad. So I was pretty jazzed to see Amanda Hesser's recipe for the best French vinaigrette ever at Cup of Jo today. This is vinaigrette French-style, "perfectly peppery, garlic-y, lemon-y." Yes please.
Hesser tells us that she's not one to smooth out the edges of vinegar with honey or sweetness; she likes her salad dressing a little rough, a little edgy. "I like a masochistic salad with bitter greens and an assertive dressing. I like to know I'm eating salad, damn it, and that the dressing is my master."
To get that punch of flavor, Hesser works in anchovy, garlic, Dijon mustard, and and lemon. I can hardly wait to try it.

My go-to vinaigrette has a small chopped shallot, a 1/2 tsp. or so of Dijon mustard, a tbs. of white wine vinegar, and some olive oil to pull it together. It's punchy, shallot-y, and easy to throw together. I save the salt and pepper for the actual salad ingredients.
