What do you get when you cross a classic French vegetable stew with homemade pizza? Ratatouille pizza! This gorgeous pizza was created by Sonia of Food Obsessed, and it's one of the most splendid uses of zucchini and eggplant I've ever seen.

This is such a simple recipe, but it packs in a wealth of vegetable goodness. Sonia sliced eggplant, zucchini, and tomatoes, and layered them on a whole wheat pizza crust in dramatic concentric circles. It makes for a gorgeous presentation and a colorful pie — and you get soft, oven-roasted vegetables in every bite.

I don't know about you, but I'm about to run out and find myself an eggplant, a tomato, and zucchini! Oh, and a ball of pizza dough too.
