This is such a simple recipe, but it packs in a wealth of vegetable goodness. Sonia sliced eggplant, zucchini, and tomatoes, and layered them on a whole wheat pizza crust in dramatic concentric circles. It makes for a gorgeous presentation and a colorful pie — and you get soft, oven-roasted vegetables in every bite.
I don't know about you, but I'm about to run out and find myself an eggplant, a tomato, and zucchini! Oh, and a ball of pizza dough too.
