While I love feasting during the holidays, I always find myself in need of a reset when the New Year rolls around. You probably know what I'm talking about: more salads, less heavy starches; more water, less alcohol. As she notes, pomegranate is "a must" in any winter salad. Paired with apples, gently honey-roasted almonds, tangy balsamic, and finely chopped kale, the salad is wholesome, filling, and beautiful to look at! Just the thing for a grey winter day.
