I am Basque but not French Basque, Spanish Basque. I adore Spanish Basque food, especially the Salt Cod dishes - nice and spicy. As well my grandmother use to make a potato dish with lots of garlic and Basque style chorizo, makes my mouth water just thinking about it! We just spent some time in the Gascony region, which is part of the French Basque region, the food was amazing; different from the Spanish Basque food I have come to love but amazing!
