Forget romaine. Kale—with its chewy texture, earthy, green flavor, and superfood nutrition profile—is a fantastic base in raw salads. Many of us here at The Kitchn have been known to, ahem, obsess a little over these salads at one time or another, making a raw kale salad as much of a daily routine as our morning cup of coffee. Floral Drink Dispen...

Last night I tossed some fresh corn, tomatoes, parmesan, red pepper flakes and pepper with lightly wilted kale. Next time I will try massaging the kale instead of wilting on the stove!
Love the Pecorino & Lemon version. Perfect in it's simplicity!
I'm a big fan of kale salads for breakfast (goo.gl/RJ6X9). Toss with a few ripe tomatoes, poach some eggs, and top with a fruity vinegar.
I can't stop making this kale, peach, corn and feta salad. Juicy peaches, briny feta, and sweet corn are a great complement to kale.

Our gateway kale salad was the Caesar kale 'slaw' in Bon Appetit from last summer (June? July?). I probably made that salad every week for a good 2 or 3 months as everyone in my family (4yr old included!) just loved it. But more importantly, it made me realize that kale is such a good canvas for dressing and salad add-ins and as a result, kale appears on our table on a regular basis.
I love the idea above of the kale, peach, feta and corn salad-I'll have to try that one. But I'll always have a soft spot in my heart for the Kale Caesar from BA.

Wheat Berries with Charred Onions and Kale. Easily the best salad I've ever made. Even my teen age kids loved it.

Recently had kale slaw at a restaurant and loved it. Made my own version at home. Going to buy more kale at the market this weekend and try more recipes.
