We absolutely love the smoky, tangy, crunchy flavors and textures of a good BLT. But this is obviously not a combo for vegetarians, so we were so happy to see this vegetarian "BLT" at Country Living, with smoky blue cheese, beefsteak tomatoes, and one other very special ingredient.
The other ingredient? Rosemary mayonnaise! That adds the final touch to a smoky, snappy sandwich that honestly doesn't need to be limited to a vegetarian crowd. We think this looks absolutely delicious. My favorite faux BLT is made with natural chunky peanut butter mixed with smoked paprika. I'll bet it would be good with rosemary and garlic too. That Rogue smokey blue is so expensive it's best served on its own with fruit.
when I was a vegetarian I'd make BLTs with smoked tofu.. so fabulous!
I also find for a veg "BLT" a cream cheese spread works really well (it stands up just a tiny bit better to picnic heat than mayo does). I love a nice, whipped rosemary-infused cream cheese with those fat, beautiful tomatoes on crusty bread toasted to perfection... Man, am I hungry.
I happen to be a big fan of veggie bacon...but you have to be careful, because the tomatoes will make it soggy very quickly! Also essential to my blt: fresh dill.
Also, try out mayo (vegan or non) mixed with smoked paprika or the sauce from a can of chipotle peppers. Yum!
Rosemary mayo? Oh I have to try this...and yes it IS picnic season!! I might even try this at the next one i attend.

Have you ever tried smoked eggplant? You can make it crispy and salty and smoke it just like bacon, it's a perfect substitute, in my opinion. See, for example, the recipe below.

I make my BLT's usually with smoked, fried tofu, tomatoes, Veganaise, and lots of Romaine. Yum
avocado LTs are delish.
I saw this tip years ago on TV for a bacon substitute for BLT's that is so delicious: In a hot non-stick frying pan, cook thin slices of smokey provolone cheese until they are browned and crispy then add to your "CLT" (cheese, lettuce, tomato)... with your Miracle Whip slathered on the tomato layer, of course, you can't have a BLT or CLT without Miracle Whip...
Rosemary mayonnaise! This reminds me of a sandwich from a now-defunct café/bakery where I worked in high school: basil mayonnaise, smoked gouda, and sundried tomato. For the basil mayo you just stirred chopped fresh basil, a squeeze of lemon and some pepper into Hellmann's.....so yummy. Oh, how I miss that bakery!
I can't wait to try eightisenough's CLT. I always get excited about smoked cheese and then after having a little when I get home, it sits in the fridge for months because I don't know what else to do with it.
