I've made #5 for dinner several times, and it's great! Eating the leftovers for lunch the next day is almost even better, since the flavors have more time to meld.
Love Quinoa - I make some up and mix with kale, sauteed with red onion, garlic, chilis and a bit of salt and pepper. Put a few cups of this either in a bowl to reheat for lunch at work, or sprinkle cold on salad greens for another kind of lunch. Very satisfying and delicious... and easy to make for the week ahead!
My favorite is with black beans, sauted onions, chipotle, and feta with a cilantro lime vinegarette. Can't get enough!

My favorite quinoa recipe is probably the simplest I've made - it's a soup with spinach and chickpeas. Spiced with nutmeg, cinnamon and thyme. An unlikely combination, but so good.
