Now that we've shown you our favorite way to make scrambled eggs, lets talk about all the stuff you can add to put them over the top.
We usually think of adding these sorts of ingredients to omelets or frittatas, but why not scrambled eggs too? Here are a few of our favorites:
Extra Creamy
A little cream is a classic scrambled egg ingredient, but if you don't have any on hand or want to try something new, mix in some sour cream, Greek yogurt or even cream cheese.
Fresh Flavor
Herbs are a no-brainer. Just about anything fresh will work. We especially love using thyme or chives.
Tangy Tomato
For Tuscan-style scrambled eggs, add fresh or canned tomatoes to the raw eggs and cook them together – very slowly. We also like to add roasted or sauteed cherry tomatoes to the mix once the eggs are cooked.
Pantry Staples
A little touch of capers, sun-dried tomatoes, roasted red peppers or chopped olives goes a long way.
Whatever's In Season
Fresh vegetables are always a good choice. Right now, we're reaching for asparagus, peas and leeks. If it's something that needs to be cooked, we like to cook it separately from the eggs and gently mix it in right before serving. If you use the same pan for the vegetables, be sure to wipe it clean before starting the eggs.
A Little Meat
Crumble some sausage or chop up some bacon or ham. Why not some leftover chicken or turkey? And smoked salmon is a classic pairing.
Cheese!
Scrambled eggs love cheese – whatever you have on hand will do.

TW Salt Mill by Wil...

I made my husband breakfast last weekend with little cubes of cream cheese in it and the eggs poured over sauteed asparagus. He said it was "amazing!" :)
Add-ins take scrambled eggs to a whole new level. I just blogged about this recently:

Salsa, especially green salsa, or any kind of hot pepper, chopped fine. Torn up corn tortillas are an excellent add in with the salsa, too. I tear them into the dry pan to get them softer/warmer, then add my salsa/peppers, and then eggs. Slide onto plate, sprinkle with cheese, be happy.
I love mixing in chunks of goat cheese and lots of green veggies. Surprisingly, I've found that steamed (al dente) broccoli goes great with goat cheese and scrambled eggs.
I love to saute pieces of tortilla in a little butter before adding the eggs and whatever veggies I have on hand to the pan. It adds a nice crunchy texture and makes the dish a little more filling.
Canned tuna and cheddar cheese!
Now that I saw that picture, I think I'm going to make scrambled eggs over English muffins, with bacon and hollandaise sauce. I'll probably add goat cheese and cilantro to the eggs, tho.
Sliced green onions and a bit of chopped jalapeno really wake up scrambled eggs.
Chinese barbequed pork added to scrambled eggs is delicious and makes a good quick dinner, too.
Scrambled eggs are a great blank canvas for all sorts of add-ins and good way to up the nutritional quotient of your meal.
Greens - turnip, mustard, kale... be sure to dry them well or the outcome will be watery.
Smoked Salmon and Chives! YUM! Blogged our favourite scrambled eggs recently on the weekend breakfast special post - http://hecooksshetalks.com/?p=138
Beans!
I always add bell pepper and cheddar, with sun dried tomatoes whenever I've got them around. Some of the above suggestions are wonderful; I'll be doing a lot of experimenting.
Spinach, basil, parmesan & garlicky salami. We call them pizza eggs.
i'll add almost anything into scrambled eggs.. a few favorites include ricotta and herbs, any type of pesto (we are partial to cilantro pesto minus any nuts), roasted red pepper humus, or leftover lentil soup - sounds odd but tastes great.
always tarragon--fresh or dried!
Cottage cheese is fantastic in scrambled eggs (just stir in a tablespoon or two before the eggs hit the pan), and I second the person who mentioned hot peppers.
Dry chilli flakes, or paprika, adds a really simple lift if you don't have anything else.
