Want to celebrate St. Patrick's Day with something green, but you're not too keen on food coloring in milk, or bright green beer? Here's something to put you in the mood, made with an unexpected and extremely un-Irish ingredient: Avocados!
This pie is from Jessica Jones at How About Orange. She found the recipe at the California Avocado Commission, and she whipped up this super simple pie. It only has four ingredients (not including the graham cracker crust).

Yum! I've made something similar before and it was delicious! I also ate a raw vegan avocado pie at a restaurant a few years ago that I loved!
@Chicagocook You could easily make this same recipe into a raw vegan avocado pie by swapping soaked cashews for the condensed milk. You'd probably have to add a tablespoon or so of agave nectar (or other liquid sweetener) to get the same flavor, but it would be an easy switch.
I made an avocado pie a few years ago and was amazed at how wonderful it was. Our guests did not even know it was avocado, they thought it was a creamy key lime. I served it with a meringue topping; sinful.
This recipe sounds so good. I don't mean to be too off coloring here (no pun intended) but I've had enough experiences over the years with green food dye to make me run the other way. You know what I'm talking about, when the next day your elimination comes out Kelly Green? Now this recipe using avocados sounds wonderful.
