A Grapefruit & Shrimp Salad for When You Just Can't Deal with Winter Anymore

Hearty stews and casseroles are ubiquitous during the winter, but when I feel like I need to lighten things up a bit, I turn to citrus. In-season citrus lends a bright, acidic note to any dish — like this grapefruit and shrimp salad with coconut rice.

The key to this salad is the dressing, a mix of fish sauce, fresh lime and grapefruit, sugar, garlic, and a Thai chile. It's sweet, salty, spicy, and tangy. Toss grapefruit segments, radicchio, carrots, scallions, fresh mint and basil, and some chiles in a bowl with the dressing, and then top with some sautéed shrimp.

Serve with a side of coconut rice and you've got a fresh, flavorful meal. Take that, winter!
