I'm on the hunt for great soup and stew recipes to make in the next couple weeks. I want something with great texture and lots of flavor, but not too heavy. This chickpea stew with spinach and sausage definitely fits the bill.
Right now I'm all about sausage and chorizo. I like adding a small amount to my stews and stir-fries because it adds a bit of fat and a lot of flavor. This stew is balanced by the chickpeas and spinach, so I can eat a lot without feeling so bogged down.
