A few of our editors are doing Whole30 this month, and I'm helping them out a bit by finding some of the best Whole30-compliant recipes on the internet. This spin on beef pho — with an aromatic broth, slices of beef, and spiralized zucchini — definitely fits the bill.
The key to big flavor is first broiling onion and ginger on a baking sheet to get it almost charred. You also dry-toast the cinnamon stick, whole clove, and star anise on the stovetop before adding the broiled onion and ginger, beef broth, and fish sauce (this brand is Whole30-approved, by the way).
After you strain the broth, serve it with kelp noodles, spiralized zucchini, and some cooked beef. Garnish with lime juice, fresh basil, and bean sprouts!
