This little bowl of sunshine is here to save you from feeling gross all winter long. It has lots of golden beets and apples, and is topped with quinoa and yogurt. It comes together in a little over an hour, making it a perfect soup option for weeknight dinners and leftover lunches.

I've never thought to use quinoa as a garnish for creamy soups, but I can see how this would be a great textural addition alongside the cool yogurt. I also love that the recipe calls for golden beets instead of the traditional red beets – so pretty, right?
