When you start talking about light and healthy meals suddenly everyone starts in on the salads. Well ya know what? I'm tired of salads and I want to eat food that isn't just for rabbits. Here instead are a few light meal options that aren't just made from lettuce!

Ack! I have so many!! I'm a vegetarian, but I'm also a vegetable lover - I like to make veggies the center of the meal, and have the grains or sauce complement them. So you end up with something light but satisfying. It's all about the seasonings!
A couple of recent meals ... Black barley and baby kale, with roasted mushrooms & pecans.Seasoned with rosemary sage and thyme, It's almost like a risotto, but easier. You can make it with pearl barley and regular kale, as well.
Or black quinoa & beluga lentils with carrots, sweet potatoes and spinach, seasoned with fennel seeds, orange juice and tarragon. You could make it with regular quinoa and french lentils. I've been on a black grain kick since a recent visit to Whole Foods.
More kale...Kale with peanut sauce and spicy roasted black beans. The black beans are roasted separately. You could use collards or spinach instead of kale.
One more...Spicy chickpeas with cauliflower and golden raisins and olives. My sons ate it over pasta, but I think it's plenty satisfying as it is!

Most of these seem carb heavy, so not light in my book. For me, light means lean meat or fish with greens/salad - it's more satisfying too.
The lasagna with butternut bechemel is very good. I make my own whole wheat pasta for it too, or at least the times I made it and had the time to devote to that
I recently made these lentil meatballs with lemon pesto and they were fabulous....I think some people actually preferred them to regular meatballs! These kaffir lime scallops were actually pretty healthy too because you really don't have to use much butter to give them lots of flavor. And one of my favorite recipes from the Bon Appetit cleanse was this salmon with pepita pesto, so yummy!

Claireooto, I wanted to read your recipe, but couldn't get through the rather long and very unexpected story about your dog passing away, your grief, and your dreams etc.
Maybe if you are promoting your food blog on other food blogs, it would be a good idea to keep the very personal and heavy stories separate, 'cause I can attest that dead pet stories have a way of ruining people's afternoons :|
Thistly, I found your comment to be somewhat insensitive and rude. If someone wants to link to their recipe on their own personal blog, that's their right. And if they share personal stories on that blog, that's their right as well. If you aren't interested in the story, I'd suggest you just scroll down a bit and find the recipe.
Thistly - thanks for the advice. It's funny, I was just saying to my six-year-old-son that I should stop talking about my dog so much, and he said, "It's okay, mom, you miss her, we all do!" Six years old!!
I will certainly take your advice to heart. I post at least one recipe almost every day. Sometimes my mind wanders. And I'm not promoting my blog, I'm sharing recipes! I thought that's what this was all about!
