This past week I've been exploring St. Ives in Cornwall, England. It's a good-size town full of museums and galleries to explore, and of course a pasty shop practically on every block. It's been chilly and rainy here, which is why I've been gravitating towards these delicious variations of the savory pastry.

True Cornish pasties (pronounced PAST-ees) include beef, potatoes, and turnips. These six variations on the traditional hand pie are great to eat hot or on the go — the perfect sustaining lunch for the busy holiday season.
