I’ve been cooking with coconut milk a lot lately, and I seem to have a knack for picking recipes that never quite use the entire can. It feels wasteful to to get rid of the leftovers, so whether it’s just a few tablespoons or a cup, I always save what’s left.

To prevent your leftover coconut milk from getting lost and forgotten in the back of the fridge, here are five great ways to use up that open can.

1. Use it in your coffee

Ditch the half & half, and use coconut milk to add some extra flavor and creaminess to your morning joe.

2. Stir it into oatmeal

Whether you’re making a bowl of piping hot oatmeal or chilled overnight oats, consider substituting a portion of the regular milk or water you’d normally use, with leftover coconut milk.

3. Make a Glaze

Substitute regular milk with coconut milk to impart a subtle coconut flavor to your iced baked goods.

4. Freeze it

Blended into a smoothie or cocktail, coconut ice cubes add a refreshing and flavorful twist.

5. Bake with it

The addition of creamy coconut milk will keep your cakes moist and tender.
