The other day we had to choose between a bunch of asparagus and a bag of sugar snap peas from our CSA. Most everyone picked the asparagus but we couldn't resist the snap peas! Sweet, crunchy, and delicious raw or cooked (or pickled or roasted!), they are one of the most wonderful foods of spring.
Here are 5 very different way to eat sugar snap peas. How do you like to prepare them?
• 1 Snap Peas with Meyer Lemon and Mint - A quick, vibrant side dish
• 2 Barley Salad With Green Garlic and Snap Peas - Light yet filling – and nutritious, too!
• 3 Pickled Sugar Snaps - Sweet and crunchy with vinegar and garlic
• 4 Pork Stir-Fry with Asparagus and Sugar Snap Peas - A savory spring dinner
• 5 Sesame Roasted Snap Peas - Roasting brings out the sweetness of the peas

Thanks for this! I am so in love with snap peas. Great idea to pickle them!
I like to throw them in a small sauté pan on medium with a couple tablespoons of water. As the water boils off it steams the peas ever so slightly. Then I add a tablespoon or two of butter and a few chunks of crystallized ginger that I've chopped up. Add some salt and black pepper and it's a super simple and tasty way to serve them!
they're really tasty uncooked and wrapped in a bit of lox.
Straight out of the pod, while still standing in the garden.
A current favourite recipe for my family is throwing them in a roasting dish for 15 minutes with a little oil, a chopped shallot or two and sprinkled with a little salt and thyme. Roast for 15 minutes and enjoy!
normally I just eat them raw - sugar snap peas are my favorite raw snacking veggie - but when I do cook them I agree with keeperrox, they're fabulous with fresh ginger!
