Pistachios are one of my all-time favorite snacks. They're low in fat and they taste good plain or even jazzed up with a little lime zest and chili seasoning. With that said, sometimes I want more than just the raw version; sometimes I want them incorporated into a delicious summer treat.
Cookies are always a huge hit no matter the time of year, they're easy to make and even easier to serve up to family and friends. Pistachios have a great texture that's just perfect for incorporating into a cookie, you only need to chop them up and throw them in the dough! If you're looking for something slightly more fancy; try a pistachio cheesecake and top with bright and fresh raspberries.
For those macaroon lovers and risk takers (they aren't exactly the easiest things to make), pistachio sounds like an absolute delicious flavor. Plus, the color is spectacular and no one would be able to resist the urge to taste one.
Ice cream, cold drinks, cupcakes, cakes — you name it and pistachio's will only make them better.

Low in fat? A 1-ounce serving contains 20% of the recommended daily fat intake.
They're (relatively) low in calories, but not in fat.
That said... the recipes do look delicious.
