My college roommates and I once made cheesecake cups using wonton wrappers baked in muffin tins.
Great way to make individual serving fritattas that you can keep in the fridge for a quick breakfast. But what about little bitty baked zitis for a party, or eggplant parm, or chicken parm. I'm going to have to blog one now
Kristay, I've also done a cheesecake theme. I pressed a butter-graham cracker combo into a mini muffin tin lined with plastic wrap, then piped in a cream cheese mixture that included Abuelita chocolate syrup. No baking...just chilled them. They were fun little cheesecake bites.
I love mini muffin tins. Great for portion control. I do crustless quiches: http://bit.ly/mn0IPE all the time. They are great for parties or breakfast on the go (toss in snack sized ziploc.) These look great! So far, I've done frittatas and frozen tomato sauce in the tins. The mini tacos are a great idea. Perfect for my little one's lunchbox, I think.

I make mini meatloaves fairly often. Nice for portion control, but it also seriously cuts down on the baking time. Which means I can make meatloaf in the summer and not be baked myself! I use Alton Brown's recipe, it works out perfectly.
I use the pans for mini-meatloaf and individual mac & cheese.
Love mini-anything foodwise. I've got a mini muffin pan and I've made tiny one-bite pumpkin pies and cheesecakes.
Using a regular sized muffin pan, you can use a vanilla wafer in the bottom to make a quickie "crust" for cheesecakes too.
I'm definitely trying the scalloped potatoes and maybe a few of the others for possible party food. :)

I've baked stuffing in a muffin pan - more surface area means more crust - yum!
