The egg in a tomato is one of my faves! Now that garden tomatoes are in full ripeness, I've been eating this dish a lot!

in Portugal we make a tomato breadsoup with eggs, in the Alentejo they serve it hot with fried bacon and fresh/cold fruit, mostly grapes, plums and figs
The mix of egg-tomato-fruit is so yummy!

Having eggs in tomato cups for supper tonight - added a bit of ricotta, pesto, and Parmesan. It's too hot for the oven, so they're cooking in the slow cooker right now.
