It's September — are your days getting busier? We've all had those nights when cooking dinner can honestly seem like such a daunting task. But don't turn to take-out or fast food — turn to fast meals using just two pots or less.
If you have the time to plan ahead, the Vegetable Casserole from Better Homes and Gardens would make a really delicious and healthy family dinner that only uses one pot! It needs to cool for several hours, so just throw the items in and let it cook while you're out running errands or at work!
Fire up the grill and make the delicious Bacon-Wrapped Jalapeno Chicken Bites from Salad In A Jar, Sweet and Spicy Honey Grilled Chicken from Our Best Bites or even better — make both! They're so easy to prep and even easier to throw on the grill and let the flames do the work.

I don't know why someone would go to all the effort of cutting pieces of honey grilled chicken into shrimp shapes.
I think you might have your species crossed...
Two pots or fewer.
*twitch* That headline should be "or Fewer."
I'd love to pull up the BHG recipe but the vegetable casserole link is not working.
I love this! I am very much into meals like this - you know soups, stews, casseroles.
I think I know what to do with my grill this weekend! What a fun looking recipe!
The roasted cauliflower looks amazing!
Grammar pedants: Read this.
The link for the honey grilled shrimp isn't working and I'm drooling over it right now.
Uhhh, that honey grilled "chicken" is actually shrimp...
This kind of cracks me up because I can't think of very many meals that I make that use *more* than two pots...
What a coincidence! I just posted a one-skillet recipe for chicken and vegetables. 'Tis the season =)
these aren't dinners. they are main courses. at least for me. i can't imagine eating a dinner that consisted solely of chicken or shrimp. perhaps the veggie casserole would pass, but the rest? i am in need of more balance in my meals!
@asmallcontempt - hah! my thoughts exactly.
