What's your freezer like? If it's anything like my narrow side-by-side model, it's crammed to the gills and just not wide enough to fit much more than a quarter-sized baking sheet. Storing a towering, beautiful ice cream cake in it? Impossible.
However, having fun ice cream treats is not an impossible feat for those suffering from small-freezer syndrome. Here are other ways to get your ice cream cake fix that won't require you to empty or rearrange your whole freezer!
1. Ice cream sandwiches
Who doesn't love a good ice cream sandwich? Make a batch of your favorite cookies and church up some homemade ice cream if you're feeling ambitious (but no guilt if you're not!). Sandwich it all together and you've got yourself a summer treat. Individually wrap them for easy storage if you want to set aside a few for a future sweet, creamy fix.

2. Ice cream pie
A pie dish might be about as wide as an ice cream cake, but it's definitely not as tall, so it's a great option if you have a wide freezer but not much headroom. Start with a cookie crust, pile on the ice cream, and add toppings of your choice.
3. Ice cream cupcakes
Who wouldn't want an individual-sized ice cream cake? Line muffin tins with paper, fill them only halfway with cupcake batter, bake, and cool. Transfer to a plate, top with ice cream, and freeze! You can also skip the baking altogether and fill the muffin liners with cookies instead for a mini version of an icebox cake.
4. Ice cream cake in a loaf pan
Even my small freezer can accommodate a loaf pan, so use that to make your ice cream cake instead. You can also look to the Italians and make a semifreddo, which is a light, mousse-like frozen dessert.
5. Individual ice cream trifles
Trifles are always show-stopping in appearance yet easy to put together, and you can make ice cream versions just by swapping in ice cream for the whipped cream. Cut cake into small pieces and layer away in individual glasses with ice cream and summer fruit. Beautiful and delicious — perfect for a summer dinner party!
