This is erie! I just made and relished (for the 3rd time in the past year) the Warm Chickpea Salad with Cumin & Garlic for lunch today. Seriously, Faith, this is hands down the best chickpea salad I've ever eaten. Folks, what are you waiting for?
Great to see this round-up! I've been without power in the DC area for 3 days and hunting for / attempting to concoct recipes just like these. Last night, I tried a version of Mexican Caviar (black beans, corn, chopped tomatoes, onion, peppers, lime juice, and Mexican herbs & spices) with canned chicken for extra protein and meatiness. Served it with tortilla chips, and it was perfect for a 95 degree day with no electricity. YUM! even though it is winter here, i love the look of that chickpea salad and have bookmarked it for the weekend.
I made the no bake nutella peanut butter cookies a few days ago when the urge to bake struck me on a particularly hot day. They were fantastic! And since they're mostly just nutella, peanut butter and oats, I ate them for breakfast too!
