Oooh! The hashes and eggs look delicious. But the boy and I are not huge fans of fluffy, "souffle" omelets. Eggs should not be that puffy! Unless they're in actual souffle.
My most revelatory egg-related meal recently? Two eggs, fried over easy in bacon fat, dusted liberally with salt, and eaten on dry whole grain toast. The runny yolks turn into this delicious, salty cheese-type sauce that makes everything all right with the world.
I do need to learn how to poach an egg though. It's probably healthier than frying them.

Eggs should not be cooked in a microwave. Ever.
Jeez I hate comments that are not productive! There have been plenty of 'microwave or not' disagreements on threads, and sure, it's not for everyone.. But I for one love to microwave eggs when I need to run out of the house. I toast the english muffin the same time the egg is in my oversized mug, wrap it up and head out. David Chang's video recipe -- found on youtube -- is the perfect example. I've used assorted cheeses, random cured italian meats, or just the egg & seasoning. 30 second increments create a beautiful egg and I bet most would not realize it was microwaved.
I adore baked eggs in tomato cups! Easy to vary. Easy to cook. Looks fabulous. http://www.instructables.com/id/Baked-Eggs-Ham-Asparagus-in-Tomato-Cups/ I bake mine in a muffin pan to prevent the tomatoes from falling over.
I love poaching eggs in the microwave.. no need to break out a pot and no need to swirl.. just put it in a microwavable bowl, cover with water, and nuke for 40 s or little more. I'm not sure what the vehement anti microwavism is about, but boo ya.
