Yum - gotta try the orzo/onion version! My new favorite sweet potato meal is roasted sweet potato + roasted brussel sprouts + a sprinkling of dried cranberries, walnuts and blue cheese. Every delicious mouthful makes me smile.
I love sweet potatoes and they are so healthy! We usually make baked sweet potato fries, but I recently made some delicious mashed sweet potatoes with crispy prosciutto sprinkled on top....yum!

I love sweet potatoes! I found some white ones this winter that were very pretty - dark purplish outside and white flesh. Yum.

This weekend we did baked sweet potatoes topped with blue cheese and bacon. It was unbelievably delicious.

Roasted sweet potatoes in American cuisine are an overdone same-old same-old version that begs for butter and underestimates the possibilities with this international food. Sweet potatoes are wonderful in vegetarian stews with or without peanuts, or cooked with pork or chicken. The recipes provided for stews show off the flavor of the sweet potato much better than throwing cheese on them.
I made a lentil/sweet potato dish a couple days ago with roasted garlic/leeks/onions/etc and threw in a handful of kale I had leftover. Really tasty!

How funny! I made sweet potato hash for Sunday breakfast served on a bed of sauteed kale with two poached eggs and some slivers of avocado. I wish it were Sunday morning again! Yumm!!

I had sweet potatoes for dinner tonight, inspired by this article. I cubed mine, tossed them with coconut oil and a new Trader Joe's seasoning blend, and roasted them. I just finished sweet potato hash made with leftover corned beef from St. Pat's day (and a little bacon--bacon makes it better!). Yum and yum. You can't go wrong with sweet potatoes.

I make sweet potato fries as a meal in an of itself! Just chop up a sweet potato, spray PAM on a cookie sheet, lay out your cut fries, spray over top with more cooking spray, and then season and bake at 350 for 15-20 minutes

This is so timely! I just bought an entire bag of sweet potatoes at Sam's Club for no apparent reason (other than being hungry and feeling more virtuous with sweet potatoes than with pop tarts).
If I'm short on time, I microwave a couple of yams/sweet potatoes (4-5 mins per potato) -- almost as good as oven roasted. Well, almost. Let cool a bit, cut into wedges. Be creative from here: I rub on a little margarine (I'm lactose intolerant), add a light drizzle of maple syrup, sprinkle a little brown sugar and/or cinnamon and put under broiler for 4-5 minutes (compensates for the nuking). It's a good and easy side with hamburgers if you want to avoid the usual french fries -- especially if you already have the broiler on for the burgers.
I'm Afro-American, so here's where I give honorable mention to a popular dessert: Sweet Potato Pie -- served with whipped cream or vanilla ice cream. It's a thought for DHW who just bought a whole bag of sweet potatoes :o)
