Red-and-Pink-Stripe...

I have all the ingredients needed to make just about all the recipes..now which to make is the dilemma. I think the pumpkin soup with bacon is #1, then the pasta with pumpkin, a close second. I even bought the most delish pumpkin ice cream that is all the exact ingredients in a pie. Made homemade waffles, scoop of pumpkin ice cream, whipped cream(I didn't make) a slight drizzle of maple syrup & a dash of cinnamon. Pumpkingasm!!
I prepared some chicken enchiladas with pumpkin sauce yesterday via the MS Everyday Food cookbook. It was a winner of a dish and my skeptical husband and (at times) picky daughter ate it up with the former going back for seconds. Can't get enough pumpkin this time of year.

If I want to make pumpkin stuff from fresh pumpkin, can I buy any pumpkin (like the massive ones for carving? Does it have to be something labeled a "sugar pumpkin"?

Team Baanoo has had the kuri pumpkin coconut soup lately, and those absolutely fantastic "fall-in-muffin-form" cream cheese and pumpkin muffins. I support everyone making both of those dishes!
engil, the bit Jack-o-lantern pumpkins have coarser flesh and are more watery. While they are edible, you will get much, much better results with a pie pumpkin -- or substitute butternut squash in any "pumpkin" recipe.
If anyone *really* wants to use a big carving pumpkin for cooking, I recommend cutting it into pieces and roasting them, then put the flesh through a food mill. Let the resulting mush drain in cheesecloth or a very fine strainer. Use in a dish with plentiful flavoring.
Those cinnamon rolls! And the rice krispie treats! And the buttered rum. Wow. And basically everything else with sugar involved. I've never tried any savory pumpkin dishes but you've definitely made them worth trying.
I just roasted up all of our pumpkins in the oven this evening, so the timing of this post couldn't be better. And my kids have been addicted to rice krispie treats lately, so a pumpkin version of them is going to sneak some veggies into them. Love it!
