Don't forget eggs in Russian dressing! They are a cool, refreshing starter, or a filling snack.
There's a great recipe in _Bouchon_ by Thomas Keller (or google it).
My absolute favorite egg dish is Eggs Benedict, the ultimate being Filet Mignon Eggs Benedict. But I'll eat them in all forms, most preferably with a runny yolk.
We have three hens laying daily and this is my favorite way to cook them, very fun for kids or a cheap dinner party idea. Also good for campfire cooking. You can make them really gourmet, or put crumbled tator tots in when the crisper is looking a little bare.

I love eggs in purgatory as a quick weeknight meal, but my favorite way to eat eggs is fried (runny yolk please) over steel cut oats. With a little soy sauce and green onions, it is delicious for any meal.
Over easy in butter.
over easy over sauteed greens or asparagus, with a little bacon salt.
Scrambled with some hot sauce and strong cheddar cheese on top, with a side of kale. Or in a frittata with leek and goat cheese.
I prefer my eggs fairly basic: over medium on a toasted English muffin that has been covered with a creamy cheese spread. I have that nearly every morning--delicious!
A reliable approach to an easy-to-peel 'boiled' egg is to steam them. Regardless of freshness, they peel easily. 20 minutes for hard boiled. Also the dark sulphur deposit around the yolk does not occur when eggs are steamed..

i like my eggs all kinds of ways. i used to just love scrambled eggs with cheese until my regular date would joke me about being a child and never eating my eggs in an adult way. jerky! but it did open me up to so many other things. this sounds really gross - but over medium eggs on a waffle with syrup is so good. i do love eggs benedict. a basic ramen soup with a poached egg and green onion. frittatas with goat cheese and mushrooms! baked in a ramekin with sourdough and ricotta.

I love an egg fried in olive oil and topped with za'atar. It's crispy on the edges and so good, Lebanese style. See it here:
