Great ideas - and - I make Szechuan-style noodles at least twice a week, using regular spaghetti or linguine, and substituting cashew butter & cashews for the peanut (for variety and different health benefits):

I'm sorry, but that spaghetti taco recipe looks revolting.
Wonderful post. Braided Spaghetti Bread? What a great idea. The frittata sounds fabulous. I came up with a recipe inspired by the Frittata Al Forno served at Brio's Tuscan Grill. It's made with angel hair pasta, cream, eggs, Parmesan and Fontina cheese, bacon, onion, Alfredo sauce and spinach. Sometimes I'll add artichoke hearts. It's to die for. After reading this, I'm inspired to try other frittata recipes with spaghetti.
Spaghetti tacos? Erm...I don't know about that.
Coincidentally, tonight I made spaghetti with bacon and brussels sprouts cooked in the bacon grease. It was a pretty awesome way to make brussels sprouts acceptable after some less than stellar cruciferous experiments.
I also love to toss spaghetti with fresh arugula pesto, my kids love the bright green color.

In defense of spaghetti tacos-- my brother-in-law made something similar for his kids and it was actually really good kid food. The crunch of the taco shell brought something different to the usual spaghetti-and-meat-sauce taste. I'd probably throw in some frozen spinach for some green, and maybe play with the spices. But it's not as gross as you'd think!
pioneer woman sesame noodles is the hands-down best way to eat spaghetti noodles, IMO.
