This week I've been dishing up all the things I've learned while doing Whole30, starting with an overview of my experience, and giving you my best shopping tips and tricks. Now that you know the basics of the plan, and have some tips on shopping smart, it's time to focus on some recipes! Here are some of my favorite recipes that also happen to be Whole30 legal! This food is totally not boring.
This curried version of a shepherd's pie is comfort food at its best. It's packed with meat, veggies, and a ton of spices. The peas in this recipe are optional, and can easily be swapped out for another veggie such as chopped zucchini.
If you're looking for a way to jazz up your veggies, this might be it. When you roast cabbage, it becomes soft and sweet; pair that with a Thai-inspired almond sauce, and it's dynamite.
There is something so satisfying about biting into the crunch of crispy chicken skin! These chicken thighs come together in one skillet, which means less dishes — always a plus. The beets are sweet, and contrast nicely with the briny taste of the kalamata olives and lemon juice.
This soup is one of my favorite recipes to date! I make this on repeat during the colder months. It's spiked with a ton of warming spices and coconut milk and then topped with these really flavorful lamb meatballs. It's extremely hearty and satisfying.
This recipe only contains three ingredients, which are then thrown into a slow cooker to get nice and friendly for a few uninterrupted and hands-off hours. This is one of my favorite meals since it reminds me of being back in Hawaii. If you're not into pork, simply sub a couple pounds of chicken thighs in for the pork; it comes out fabulous either way.
This salad is bursting with flavor, and is also easily adaptable for the seasons. Can't find cherries in the winter? No problem — just add some wonderfully bright winter citrus into the mix!
Soups were totally my friend during Whole30. They are easy to throw together and will feed you for days. This soup is extremely simple and delicious. This type of meal is what I found myself craving for breakfast.
Speaking of breakfast, eggs are always an awesome choice! I'd often just top some roasted veggies with an over-easy egg, but when I was feeling fancy, I'd make this BLT breakfast salad. It satisfies so many cravings with the avocado, bacon, and runny soft-boiled egg.
This salad might look fancy, but it's one of the easiest things to throw together. Sometimes it feels best to just keep things simple, right? I think so.
Here's another easy skillet meal! The rosemary meatballs are wonderful with the sauteéd collard greens and apricots. If apricots aren't in season, try sautéing up some oranges or green apple — both would add a hint of sweetness and go nicely in this dish.
I've said it before, and I'll say it again: These tuna salad Mason jars totally saved my lunch life. They are easy to prep ahead of time, and it feels like such a relief to come face to face with one around lunchtime. Meal prep for the win, folks.
Once again, this recipe is simple at its core, but it's loaded with spice and flavor. The turmeric is very warming, and the parsley-tahini sauce gives it a little extra brightness and oomph. If you're not a fan of parsley, try another herb! Cilantro would be particularly delicious, or maybe even mint.
