With spring in the air, salads are on our collective brain. There aren't too many fresh green things in the garden yet, though, so we'll have to wait a little longer for our chive blossoms and baby arugula. But there are other good things to eat, like winter citrus, fresh spring radishes, and fennel. Saveur has a great slideshow of a dozen crunchy spring salads that make use of these things and more.
Here are two favorite salads from the slideshow:
• Fennel, Sunchoke, and Apple Salad - This is like a greatest hits collection of winter and early spring salad staples: sunchokes (Jerusalem artichokes), apples, fennel, radishes, and lemon juice. Incredibly crispy, sweet, sour, and a little bitter too. Looks very refreshing.
• Orange and Radish Salad - This is a very simple and slightly unusual salad with gorgeous color. It's just orange slices, shredded radish, a little mint, and a sprinkle of orange flower water in the citrus dressing. Beautiful!
