Made the Blackened Chicken last week - was a hit! I used thin spaghetti instead of angel hair... and don't forget to remove the garlic if you don't smash it enough!
I've made the bbq shredded chicken twice for the family that I nanny for. It's become a favorite already. I serve it on hamburger buns with avocado. yum yum!

I've been obsessed all winter and spring with this recipe for lemon-parsley-parmesan chicken from Martha Stewart. It calls for roasting a chicken, but I usually just cook some chicken breasts and drizzle the sauce on at the end. Could not be easier, and tastes just like springtime.
