I found myself working in the yard today, dedicating a few hours to digging up dandelions by the root. It's the best way for us to get rid of them without chemical sprays. Plus, it turns out that the oft-damned "weed" is useful:

The root of the dandelion can be used for medicinal purposes. Its flowers can be harvested for wine. And its greens have a bitterness that can be delicious (plus they're packed with iron).

Check these out if you're receiving dandelion greens in a CSA box or if, like me, you're culling them from your own yard. (For best results, do so when they're still young and tender, before they've flowered.)
